Thumbs up Cheese And Ham Sandwich .... But With A Twist!! (Q&E)

For the next few recipes, i am going to do some quick and easy ones, that can be knocked up in about 10 minutes or so. First up is this sandwich like no other.....yummy !!!!

    Serves: 2

    Ingredients:
    3 medium eggs
    3 tbsp grated parmesan cheese
2 cows' milk mozzarella balls (NOT Bufallo)
4 slices of country type bread, about 2cm thick*
2 tbsp pesto (either green, made with basil, or red, made with sun-dried tomatoes)
    4 slices of cooked ham
    10 tbsp veg oil
Sea salt and freshly ground black pepper
Salad garnish, to serve (optional )

    Method:
Beat the eggs and the parmesan together in a large bowl and season.
Spread the pesto on all 4 pieces of bread.
Drain and slice the mozzarella, then lay the slices of one of the balls a slice of the bread, and add the ham and pesto. Place one of the remaining slices on top. Repeat for the other sandwich.
Now heat the oil in a large frying pan.
Dip the sandwiches into the beaten egg mixture
Then place them carefully into the pan and cook over a medium heat for about two minutes on each side to allow the mozzarella to melt and the outside to become crisp. Once cooked, transfer to kitchen paper to drain.

You can now devour this as it is, or if for a meal, just serve it with a nice green salad

*Whats meant by "country type bread" is something that ISNT just a sliced loaf out of a plastic wrapped packet...a "rustic baked" loaf, nice and crusty is best

Mate, I'm struggling to keep the lard off as it is......and you are not helping one little bit.

Your recipes are not recommending reading for anytime after 6.00pm.

They are a very useful addition, however, to our Kitchen section......or for skinny buggers. Yum!
