Our next door neighbour has 2 medium size, scrawny looking mandarin trees that for some unknown reason this year have an absolute ton of fruit. Probably all the rain earlier this year.
We have been eating them every day, giving away bags of them, letting our resident possum have her share but still not making much of a dent.
On Tuesday I came up with the idea of making mandarin marmalade. Let me tell you, it was worth the effort, made 5 jars, all gone to neighbour and friend Julie who was eating it straight from the jar. So this weekend I will make a heap more.
Receipe is:
8 large mandarins (about 1 kg)
4 cups sugar
4 cups water
2 tablespoons brandy (definately optional)
Peel mandarins, discard half the shins, finely slice remaining skins. Cut mandys horizontally in half, discad seeds. Blend or pulp pul in batches until just chopped. Combine rind. pulp sugar and water in boiler. Stirr constantly over heat without boiling until sugar id dissolved. Bring to boil, reduce heat, simmer uncovered without stirring for about 50 mins or until mix will jel when tested on a cold saucer. Stir in brandy, pour in hot sterilised jars seal when cold.
