    Thumbs up Very easy Italian chicken recipe

    We came across this recipe on a programme called Lidias Table, she owns several Italian restaurants in US and her recipes are always simple and extremely good to eat.


    50 gms butter
    2 tablespoons veg oil
    1 free range chicken cut into 8 or 10 pieces( leave skin on and cut breasts into pieces leaving bone in place)
    Small tub green olives cut in half
    Good handful of pine nuts.
    1 or 2 cloves garlic chopped finely

    Melt butter and oil in heavy based casserole dish, add chicken pieces, brown them on all sides. Add garlic.

    Add 200mls water or half stock, half water.( I add the liquid in 1/2 at a time, but just check there is always some liquid in base of pot)

    Bring to simmer, cover and simmer for about 20 mins. Add olives and pine nuts cover and simmer for another 20 mins.Enjoy!!!!!!!

    For people who like olives or chicken, this dish is a treat. I like both......so I really liked it.

    I really dislike green olives (black olives are okay), but I love pine nuts. hehe

    I refuse to discriminate against olives on the basis of their colour........I eat 'em all.

    LOL....

    I don't know why, but as far back as I can remember, I have really hated green olives. There aren't a lot of foods that I don't like, but that is one of them. hehe

    Hi Kellen

    I do not eat olives in any shape or form, unfortunately this recipe has to revolve around the olives to create the taste, not much else to cause the flavour.

    I will find another one for you, not difficult as we try new things all the time here.

    I bet it is delicious... I'm just a wuss when it comes to olives. :-)

    The boys are doing well. Thank goodness, they've learned to sleep a bit at night. Unfortunately, I'm still in the habit of staying up through the night because of them. It's 2:25 am here right now, and I have an important meeting at work in the morning! Doh! They will be going on their first big trip soon. We're driving up to St. Paul, Minnesota for Easter to see their grandparents (Sarah's mom and dad), and to welcome my brother-in-law home from his deployment in Afghanistan. It's about a 6.5 hour drive, but calculating for frequent stops will probably be closer to 8. I might be biting off more than I want to chew on this one. hehehe

    Hi Kellen

    There are only really 2 vegs I won`t attempt to eat , olives, and mushrooms in any form. I can barely bring myself to cook them, can`t stand the smell. Unfortunately Gary just loves both of them.

    I do not envy you making that trip with the little dudes. At least when they get older you can buy their silence with a dvd or nintendo ds, but babies will not be bought at any price.

    Have a safe trip, guess your brother in law will be very happy to be back home. Those guys in Afghanistan do it tough.

    I love mushrooms, but it depends on the kind and how they are prepared. In fact, I was just out at the farm yesterday hunting the woods for wild morels. YUMMMMM! Unfortunately, our strange weather in the area has had a really negative impact on them this year. I only found 4 tiny ones in about 2 hours of looking. During better years, I'll find at least 10-20 pounds in that same amount of time.

    I know every parent probably says this, but we are really going to try to keep them off the TV and video games as much as possible during the younger years. I love technology (I'm a tech nerd), but I don't like how kids can get so immersed in video games instead of being outside and learning about the REAL world. We'll see how that REALLY works out down the road, but I'm saying it for now. hehe

    I can't wait to see my brother in law! He's a very close friend of mine, and is also one of my wilderness trip companions. He served in Korea and then did two tours in Afghanistan. He is done now, and while I'm proud of his service, I'm glad he's done.

    Here are two pics of a trip my brother in law and I did last year in the Boundary Water Wildernes Area. He scheduled his military leave just for this trip!

    Standing at the top of one of the higher points in the area. It's actually an island that just shoots straight up in the air. As we canoed by it, I said, "wow, I bet the view up there is amazing." That's all there was to it. We had to climb it. About 3 feet behind me is a straight drop off about 300 feet down to the beach. This lake is one of many that shapes the boundaries between Canada and the United States. Canada is the land on the right of the lake. United States is the land on the left side of the lake.
