Sharp knives are essential for safe and effective processing of fish, poultry, meat and vegetables.
Good knives are expensive and we've shelled out plenty of money over the years for trade-quality butchers' and chefs' knives.
Several years ago, I discovered a great little AccuSharp knife sharpener (I think it cost me about $30.00) and it puts a great edge on a cheap stainless steel blades.
These days, I buy cheap knives (like those pictured) in Asian grocery shops. The three little cleaver-style knives probably cost a total of $25.00 and the filleting knife cost me about $12.00 in a fishing and camping store.
The sharpener puts an edge on any of these knives (and any better quality ones, too) with a couple of strokes.
We no longer need to spend big money on knives.
The sharpening arrangement is reversible so that, when it wears, you can change it over to expose new sharpening surfaces. We've just done this after about six years of service.
