Have you tried any of the eggplant recipes in the Preserving the Italian Way book?
Just discovered that the eggplant bush has lots of babies and as I am the only one here who eats them I will need to preserve some.
I usually just slice them, sprinkle with salt then after a while brush with olive oil and bbq them, but now need to process lots of them in the coming weeks.
