    Good recipes to try

    Hi all
    I have been watching a programme called Annabel Langbein The Free Range Cook.
    It is on the ABC at 6pm on Saturday nights.
    Annabel is a Kiwi and has a huge garden (no aquaponics) with lots of fruit trees, her property is situated on the edge of a lake in NZ, just beautiful.
    Her new cookbook titled The Free Range Cook is due for release in November.( I have already ordered and paid for mine.(don`t tell Gary, he thinks I already have the worlds largest cook book collection)
    I really like the food she cooks, it is no frills basic food using good fresh produce, which we all seem to have plenty of.
    I would like to share a couple of recipes with you and to stop these posts from turning into great long saga`s I will put each one up seperately.

    Zucchini Fritters.
    1 1/2 cups of plain flour
    3 Teasp Baking powder
    3 eggs (preferably free range)
    3/4 cup grated Fetta cheese
    Salt & pepper
    2 or 3 medium zucchinis grated then squeeze to remove liquid

    Mix it all together put spoonful at a time into nonstick pan with a little veg oil and cook until golden on each side.
    Difference with this recipe is that the fritters rise and become very fluffy.
    Even Gary eats zucs cooked this way.

    It will taste so yummy if you make a dipping sauce for it, so I will share my favorite dipping sauce..ENjoy

    Zucchini Fritters Dipping Sauce

    1/4 cup tamari (or soy sauce)

    2 tablespoons water

    1 tablespoon fresh grated ginger

    1/4 teaspoon toasted sesame oil

    1 tablespoon fresh chives

    Preparation:

    mix all ingredients together in a small bottle with a lid and shake. Sauce will last in the refrigerator for 7-10 days.

    I asked my wife about her fried chicken, she really no sure how to explain to me. But I guess the key ingredient is Chicken powder, Korr's I think.
    then the breading is tapioca starch mixed with bread crumbs. she soaks the chicken in water with chicken powder, then she even puts it on the chicken before she breads it.. I guess she likes the chicken to a have a over dose of chicken flavor.. Not really sure but it always tastes good to me.. what the heck... At least I am not cooking it..

    Please thank your wife for me Michael, I see fried chicken on American tv shows and in movies all the time and despite all my efforts the end result never looks as appetising.This one sounds very asian, will definately try it this weekend.

    Watched a programme this week that had a tv chef from aus making fried chicken by dipping it in beaten egg white then coating in a mix of herbs, plain flour and cornflour.

    Thank goodness we have a really good lot of organic, free range chickens to experiment with.

    Thanks for your dipping sauce Lara that is a definate must try.

    Take it from a Southerner, where American fried chicken is a religion...(No kidding, it seems like every church function involves fried chicken in some way.)...preparing the chicken is key to success!

    Egg is good. Some people coat with egg whites, then breading, then egg whites again, then another coating of the breading. But the real key to success is to soak the chicken overnight (at least 8 hours and up to two days) in buttermilk with onions, herbs, paprika, and cayenne pepper. Drain the chicken in a colander, drop into a plastic bag with flour, shake, then drop into a pan with very hot oil. Mmmmm!

    Thank you so much for the receipe.

    We have just now finished processing 10 of our home grown meat chickens so after a trip to the supermarket tomorrow to get come buttermilk I will let you know how it all turns out.

    Thank you for providing this delicious recipe, I love to eat banana fritters and apple fritters, and I will now try to make this zucchini fritters. Fritters is usually dough or batter based foodstuffs. In banana fritters, I love to put and spread some margarine and a dash of sugar.
