Yes Gary....roasting in duck fat is probably not the healthiest option when cooking & eating potatoes....but WOW are they delicious !

Spent a lot of the weekend watching the kids at various sporting activities,
Two of my son's at Auskick, then my daughter at her ballet class, then two of my son's at their karate belt grading class.
All this watching of others exercising made me hungry !

So.....last night I smacked up this & dumped it onto everyone's plate.

Veal schnitzel topped with a bacon/mushroom/onion mix,
    Roasted vegies (corn/beetroot/pumpkin/potato),
Steamed vegies (brocolli & a few snowpeas).

    Yum !

    Cheers,
    Shane.

    Hi Shane,

Veal schnitzel topped with a bacon/mushroom/onion mix......
Just as well there are few carbohydrates in this lot.....I might be able to sneak it past Her Serene Highness as diet food.

we just had corn on the cob wednesday night with our crab legs.. for the corn, i pulled back the husk and removed the threads.. then wrapped it in bacon, pulled the husk up and tied it off, cooked on the grill, the corn was unbelievable! i smoked the crab legs with a "stove top smoker)
with the leftovers, i made corn chowder - i used half yukon gold and half yams for the potatoes.. topped the bowl of chowder off with some shredded crab - yum

    Hi,

Tonight's repast was fish and chips........jade perch (dusted in flour) and pan-fried served with chunky chips (or fries for our US friends).

Few pics of what I cooked up this past weekend.

    Saturday night,

Had to make my sandwiches for work & freeze them for this weeks lunches,
Easy peasy....I just crumbed & cooked up a stack of schnitzels to make them.....veal, chicken & pork.

Then I got stuck into preparing dinner.

    Crunchy salad,
    Chicken breast nuggets,
    Potato,
    BBQ'd Atlantic Salmon,
    & a dinner roll.

Sunday night I slow cooked the kids some Coca-Cola chicken drumsticks.
They were incredibly sticky & the kids loved them.

Whilst for us adults I did,

    Crunchy salad,
    Potato,
    Chicken breast nuggets,
    Sweet chilli chicken rissoles.

    Cheers,
    Shane.

    Hi Shane,

Few pics of what I cooked up this past weekend.
So, these were imaginary pictures......possibly induced by a little red wine.

Colin......unlike Shane's, your pictures are very good......to the point where I can taste your meal.
