Inspired by the late, great Keith Floyd
This goes well with a fish curry (recipe for which will follow soon)
**THIS IS NOT FOR THOSE OF A NERVOUS DISPOSITION (or who cant handle a seeringly hot curry!!!)
Ingredients:
1 Large medium hot red chilli
2 Red birdseye chillies
2 Green birdseye chilies
25g Peeled ginger, or galangel
3 Fat lemongrass stalks
100g Shalotts
25g Garlic
(All the above roughly chopped)
1 Teaspoon paprika
1/2 Teaspoon shrimp paste
1/2 Teaspoon salt
1/4 Teaspoon freshly ground coriander seeds
1/4 Teaspoon freshly ground cumin seeds
Large pinch of turmeric powder
Method:
Put all the ingredients into a mini food processor, and blend to a smooth paste.
Light the blue touch paper and stand well back !!!!!
