Is there a ratio?
I plan to eventually have a 1000L tank with 2 560L beds.
If my tank could support about 150 Silvers, would the fish sustain the bed well enough in the beginning and even after 2months would the fish have kept up with the plant's needs?

Max stocking density is around 1 fish per 10 ltrs of water. Remember, that is Max and assumes that you will harvest the bigger fish as soon as they are big enough etc.
I would recommend that you start with half that ratio until you get some experience behind you.
Don't worry about enough nutrient for the veggies, there will be plenty.

Matt at the fish place said that 1000L could support about 180 silvers?

i will have a small system prior to this, this is just planning for the bigger more capable system later on maybe in 3months time.

I would suggest that 180 in a 1000 ltr tank will be fine for about the first month or two then you will need to get more tank or less fish.
Far too high for a domestic system.
