Have used this recipe for jam a few times over the years now....can't remember who gave it to me?
Easy to make with the kids too. I actually made some the other week with my youngest daughter.
What you need:
1.5 Litres water
500 g chopped dried apricots
1.5 Kg white sugar
Passionfruit pulp from 7 passionfruit (seeds in)

Put the apricots in a large container, cover with the water & let soak for 36 hours at room temperature.
Pour the water & apricots into a large saucepan or pot & bring to the boil.

Add & stir in the sugar and boil for 30-50 minutes (until set).

To test set drop a bit of the hot jam mix onto a chilled saucer. Put saucer in fridge for 1 minute to see if a line drawn through with your finger keeps the mix separate. If it doesn't, then boil for a further 5 minutes & test again, continue until it does.
Remove from heat & stir in the passionfruit pulp, let it stand for 10-15 minutes (stirring occasionally to evenly spread around the passionfruit pulp).

Then ladle into your sterilised jars, seal, date & label.
