View Full Version : Pickled Cucmbers

Hey all - I had heaps of Cucumbers on my AP vines - so I made these:

The recipe does not state if the vinegar is brown or white. I used White home brand vinegar - cheap stuff in a 2L plastic milk bottle.

They turned out fantastic - very easy recipe - friends and family cant get enough of them.

The best thing about it is that there is no cooking :) It is really quick and easy. I actually prefer these to fresh cucumbers in a salad.

Just did 500g of garlic a couple of days ago. Vinegar and salt, cloves and oregano. Friend gave me a jar and they were great. Different taste and no bad breath and odor that goes with garlic. When I googled pickled or salted garlic it seems that it is better for you after it is pickled. Longer you keep it the better.

My wife generally uses the brown apple vinegars, as soon as it's made they eat them all.

Thought I'd share my Pickled Cuk receipe with you all -

"if you like a little spice this one is nice"

Slice cuk in half lengthways and with a teaspoon take out seeds - cut into thinish strips and half if very long,
sprinkle with salt and let stand for 1/2 hour (I put mine in a colander so they drain at the same time) rinse in cool water and pat driy.

Stir fry some crushed Sichuan pepper, (or blakc pepper corns ) finely sliced fresh ginger, garlic and a little chilli in a little veg oil in a wok untill you can smell the aroma of the peppers

Add sugar, Rice wine Vinegar, (I used apple cider vinegar) equal quantaties. and stir till sugar is disollved
throw in slices of cuk and large dash or two of Lite soy sauce and take off heat straight away.
Place in a screw top jar - best served next day -= yummy with fish
guaranteed it wont last......

We are garlic fiends so I also added garlic on this first trial - you can also alter the sugar and vinegar content to suit your own taste
