View Full Version : Italian Chicken Frittata

Here is a great dish to accompany the Italian chicken recipe I have just posted.

80 gms butter
1 red onion sliced
100gms prosciutto or really good streaky bacon cut into thin strips
350 gms chicken thigh fillets cut into strips
10 cooked chat potatoes sliced ( skin and all)
8 eggs beaten
1/2 cup parmesan
1/2 cup tasty cheese

Melt butter in heavy based frying pan, fry onion and prosciutto, cook until softened, add chicken and cook for 8 mins or until cooked through, add potato and stir through.

Mix eggs and cheeses in a bowl , pour over the chicken potato mix ( make sure the egg mix goes all the way to the bottom of the pan by just lifting the potato etc up a little)

Cook over a low heat for 20-25 mins or until mixture is firm and sets, then put your frypan under the grill and cook for another 5-10 mins until golden.

Remove from the heat let it stand for at least 5 mins, run a knife around the edge, turn out onto a large platter and cut into wedges.Serve hot or cold.

I promise you your house will smell like a top Italian reataurant for hours afterwards, particularly if you use prosciutto,your friends and family will be very impressed.

The recipe makes my mouth watering,wanna try that recipe and I will add a lots of cheese in my fritata,, that's sounds really yummy right? ;)

This is almost cruel, As my waist line has already gotten way out of hand...:( LOL
