Jan and I were just watching a TV food segment in which Paul Mercurio (Strictly Ballroom) interviewed a bloke from Australia's largest quail producer......Game Farm (http://www.gamefarm.com.au/). Their web site features some great quail recipes.......worth a look.
Based around the Hunter Valley, they supply 75% of Australia's total production......about 90,000 birds per week.
They process three times per week.....around 30,000 birds each time.
When Jan and I grew and processed quail commercially back in the early 1980's, we did 1400 - 1500 on a big week. It was usually half that number.
