I use Shan Masala (spices) to cook my quails. As I mentioned in the fish section, you can get these masala from any Pakistani or Indian spice centre http://www.shanfood.com/. For Quail you have many choices, the one I love is Chicken Tikka and Chicken Jalfrezi. To make the Quail Tikka, I make a paste of garlic, ginger and add the Tikka masala and lemon juice on the quail, marinate for 1 hour. I then prepare my magic BBQ, (I take this with me when I go hunting or 4x4 camping) http://www.cobb.com.au/index.asp. I only need 7 heatbeads for my BBQ. I lay the whole quails on the grill and rub butter with a brush, put the lid on for 5 - 10 mins, turn the quails, leave for for another 5 - 10 mins, presto, serve with fresh salad.
Chicken Jalfrezi masala is very good for stir fried Quails & Vegetables in tamoto sause.

Very, very nice Salman. I knew I wouldn't regret asking you to post this recipe!
That nifty little BBQ is a major bonus too (ie gold nugget of info)!!
Have you ever used it to smoke your fish or quail? Maybe a bit small but very neat little device. My 'Go Anywhere' Webber may be under threat.

Hi Martin,
Oh yes, I have smoked fish in my magic BBQ many times and I can tell you mate, they are so yummy! that you'll want to gooble the whole lot. I use a solid piece of wood, put it in water for 1 hour and just drop it on the heat beads, the smoke quickly engulf around the fish and the aroma gets the neighbours taste buds tingling. I have not yet smoked Quails, but now that you have given me the idea, why not, this weekend, it's all happening.

Hi Guys,
Just had a BBQ yesterday in my backyard. I marinated the Quails in Tikka Masala with a base of yogart. 20 mins in my magic COBB bbq and the smoked quails were ready to enjoy. I just peeled the skin and left the masala for an hour before throwing in the heat.

Hi Salman,
Following the earlier discussion on the Cobb BBQ, we bought one.
Our first Cobb meal was lightly smoked chicken breasts.
It's a great device (if a little expensive) and we're looking to many more meals cooked on it.

Well done, you will love this small fella and it is so portable. I have used it around 50 times on hunting trips, backyard BBQ, by the river and it is still shinning like new. I am planning to make some quail eggs cake and also bake a bread and some Tandoori Naan ( round flat bread)
